    Valentine's Day falls on a Sunday this year. Yep. We know. On a school night. Terrific.

    It might not be ideal however the past year has taught us all to adapt and get on with it. Valentine's Day is no exception.

    So whilst you're at home, cooking up a storm, why not whip up a cocktail or two? These fun love potions are super easy to make and are an alternative to all that wine we've been consuming.

    Blood Orange Bellini

    Blood Orange Bellini

    The difference between a bellini and mimosa is in the alcohol used. A bellini uses a dry sparkling Italian Prosecco, whereas a mimosa uses bubbly French champagne. Both taste amazing and are perfectly bubbly!

    This blood orange bellini recipe is super quick and has only two ingredients.

     

    INGREDIENTS

    • 1/2 cup blood orange juice
    • 8 ounces sparkling prosecco, well chilled
    • slice of orange, for the garnish

     

    METHOD

    1. In a champagne flute pour in 1/4 cup of blood orange juice.
    2. Top off each glass with chilled Prosecco, and enjoy.

    Classic Negroni

    To make the perfect classic negroni cocktail all you need is balance: use equal parts gin, vermouth and Campari, and choose the best products you have in reach.

     

    INGREDIENTS

    • 25ml gin
    • 25ml sweet vermouth
    • 25ml campari
    • ice
    • slice of orange, for the garnish

     

    METHOD

    1. Pour the gin, vermouth and Campari into a mixing glass or jug with ice. Stir well until the outside of the glass feels cold.
    2. Strain into a tumbler and add some fresh ice, and garnish with an orange slice, using a blood orange when in season.

    Strawberry Mojito

    Fizzy, minty, slightly sweet and packed with strawberries and lime, a Strawberry Mojito is sure to quench your evening thirst. Whip up this white rum cocktail in no time at all!

    INGREDIENTS

    • 1 lime, halved
    • 3-4 tbsp caster sugar, to taste
    • 50g strawberries, washed and hulled, plus extra to serve
    • 2 sprigs mint, leaves only, plus extra sprigs to serve
    • 75ml white rum
    • 100ml sparkling water
    • ice, to serve

     

    METHOD

    1. Rub the rim of 2 tumblers with 1 of the lime halves then squeeze the rest of the lime juice into a bowl. Place 1 tsp of sugar in a small dish and dip the rims of the glasses in to coat. Set aside in the fridge.
    2. Sprinkle the remaining sugar over the strawberries and mint and lightly crush with a wooden spoon to release the juice. Leave to stand for 5 minutes. Add the lime juice then whizz in a blender.
    3. Place plenty of ice in the glasses and pour over the rum. Add the strawberry mix (strain, if preferred) and top up with sparkling water.
    4. Decorate with fresh mint and strawberries to serve.
